- 1 teaspoon baking powder
- 2 tablespoons canola oil
- 1 cup honey
- 1/4 cup unsalted peanut butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- Preheat oven to 350F.
- Stir together flour and baking powder in a bowl and set aside.
- Cream together oil, honey, peanut butter, and vanilla in a large bowl.
- Add eggs, one at a time, stirring to incorporate.
- Add dry ingredients to wet ingredients and stir to form a smooth dough.
- Drop dough by the rounded teaspoonful, 1 1/2 inches apart, on 2 ungreased baking sheets.
- Bake for 12-14 minutes, or until light golden.
- Cool completely before serving.
